I've been sharing some of my own recipes with you lately, but I'm always looking for great recipes on the internet. To make the cut they have to be healthy, with a great balance of protein, fats and carbohydrates and of course plenty of veggies! Here's a great one from I made over the weekend. It's a new favourite of mine! 


The grilled zuchini, eggplant and tomatoes are super yummy but you could swap these for any of your favourite veggies. 

You could use store bought pesto if you are short on time, but I personally think this recipe is worth the extra effort.

I love cous cous but you could also use quinoa.
