Sweet chilli is not normally something I use much of, due to the sugar content, but split over the whole dish, it's not that outrageous! And this recipe is just too yummy, quick and easy not to share.
I’ve used white fish here but it also works well with salmon. The photo doesn't do it justice! Serves 4.
1kg of fish*
1/3 cup of sweet chilli sauce
1/3 cup tamari sauce (or other soy sauce)
1 tbs grated fresh ginger
3 cloves of garlic crushed
1/3 cup of water
+ Vegetables of choice**
Preheat the oven to 180˚C.
Place the sweet chilli and tamari sauce, ginger, garlic and water in a screw top container (or similar) and give it a good shake to combine.
In a large pyrex dish with lid put the broccoli and a little of the sauce and bake for 15 minutes. Bring the dish out of the oven and add the fish and other vegetables and put bake in the oven for 20-25 minutes or until cooked through.
Serve with brown rice and enjoy!

**I used a red capsicum sliced, a head of broccoli cut into small florets (you may need to half the bigger ones) and about 150g of mushrooms quartered (or sliced if they are big)
