SONJA'S BAKED TURKEY MEATBALLS

There are a lot of meatball recipes and I'm sure you will have your own tried and tested favourite. Have you ever tried turkey mince though? My mum wasn’t a fan of red meat, so growing up our meatballs and bolognese were always made from turkey mince. I still prefer the taste and texture of turkey when cooking with mince, with the added bonus is that it’s much leaner. Couple this with baking instead of frying and we’re onto a winner!


These meatballs are also a great after school snack for the kids. A protein based snack is perfect for this time of day and is really going to fill them up until dinner. That means they can get on with their homework instead of pestering you for treats!


You will find turkey mince in all the large supermarkets. This is my basic recipe that makes about 20 meatballs. It's pretty good as it is, but you can add your own favourite flavours. The possibilities are endless!


Meatballs are great as a quick and easy family dinner, and if you’re in need of a sauce I highly recommend them with the shakshuka sauce from last months newsletter.


INGREDIENTS:

500g turkey mince

1 egg

½ cup breadcrumbs

½ cup of parmesan, finely grated

¼ cup fresh parsley

1 garlic clove, finely chopped

1 small onion

1 tablespoon of tomato paste (i had some red pesto in the fridge so I used that instead)

Salt and pepper to taste


METHOD:

  1. Preheat your oven to 200 degrees.

  2. Grease a sheet pan with oil and put aside.

  3. In a bowl, mix all ingredients thoroughly with your hands.

  4. Roll into about 20 meatballs and place on the pan.

  5. Bake until golden brown (about 20 minutes) or until cooked through (there should be no pink in the middle).

Enjoy as part of a main meal or pair with your favourite dipping sauce for a party or BBQ.
